Chicken Salad

Between a long work day, yoga, and getting home at 7pm on Friday, I made this SUPER easy recipe for Chicken Salad for dinner. I love this easy peasy recipe because of the small number of ingredients, the quick preparation, and how tasty it is!
I normally pick up a rotisserie chicken at the grocery store a day before I make this recipe. One of Greg's duties is to cut it up for me :-) Teamwork at it's finest. This recipe is a true staple for busy nights at my home!
Ingredients:
2 cups of cooked cut up chicken (or turkey! This recipe is great with turkey too)
1 cup of thinly sliced celery (didn't use celery this time, but normally I do)
1 cup of small grapes (red or green)
1/2 cup of slivered almonds
1 cup of homemade mayonnaise (or the canned kind from the store if you want)
1 Tablespoon of lemon juice (I omit this ingredient because I use lemons in my mayo)
1/2 teaspoon of sale
1/8 teaspoon of white pepper
Directions:
1.) Rinse the grapes with water and cut into halves.
2.) Toss the chicken, the slivered almonds, the grapes into a large bowl together.
3.) Add the 1 cup of mayonnaise into the bowl. I have found a fabulous homemade recipe for mayo, you can find it here. It has a lot less fat and preservatives, and I know exactly what is in it!
{If you're using mayonnaise from the grocery store, at this time you would add the lemon juice. If you check out my recipe, I use lemon juice in it so I omit this step when making my chicken salad.}
4.) Add the salt and pepper.
5.) Thoroughly mix up and enjoy!!
Greg loves this recipe. He thinks it is so tasty, he loves that it's packed with protein, and it's good lunch leftovers for him too!
After yoga I paired this dish with a side of greek yogurt with some natural granola and honey. Weird pairing? Sure. Guilt-free protein-packed dinner? You bet!! :-D
